Don’t Season with Salt, Try Chimichurri


Next time you’re in the kitchen, don’t reach for the salt to season your foods. Instead, use herbs. It’s an easy way to be heart-healthy. Need a little inspiration? Try this Chimichurri recipe, which uses Italian parsley and mint. Chimichurri is used to baste meats for grilling.

½ cup Olive Oil
2 T Lemon Juice
3 cloves Garlic
1 Cup Parsley, Italian Flat Leaf
¼ Cup Mint
1 tsp Black Pepper
¼ Cup Parmesan Cheese
Pinch Cayenne Pepper


  1. Place all ingredients into food processor. Chop until smooth.
  2. Allow to sit for 5 to 10 minutes to blend flavors.
  3. Use to baste meats (Chicken, Fish, Pork) while grilling. You can also use as a marinade if you wish. Reserve some to spoon on meat before serving.
  4. Chimichurri can be prepared in advance and refrigerated for up to 24 hours.
